Hummus - I like it!

Enjoyed making hummus with Lily Forehand.  I think this will be a consistent staple  It is so good for us and anything that can be made better by adding spices works for me.

Hummus

ingredients
  • 1  15  ounce can 
    chickpeas (garbanzo beans), rinsed and drained
  • 1/4  cup 
    Swanson® Vegetable Broth (Regular or Certified Organic)
  • 1   cup 
    prepared tahini
  • 1/2  cup 
    lemon juice
  • 4   
    cloves garlic, minced
  • 2   tablespoons 
    olive oil
  • 1   
    Italian bread or French baguette
  • 1/4  cup 
    olive oil
directions
1.
Put the beans and broth in a food processor. Cover and process until the mixture is pureed.
2.
Add the tahini, lemon juice and garlic. Blend until the mixture turns lighter in color. With the machine running add the oil and blend until smooth. Spoon the hummus into a small bowl. Season to taste. Cover and let stand for at least 1 hour or until the flavors are blended.
3.
Diagonally cut the bread into 1-inch thick slices. Brush the bread slices with oil. Grill or broil the bread as directed below. Serve with dip.
Tips:

1.
To Grill: Lightly oil the grill and heat the grill to medium-high. Place the bread on the grill. Grill the bread for about 4 minutes or until lightly browned, turning the bread at a 90 degrees angle (making crisscross grill marks), halfway through cooking.

To Broil: Heat the broiler. Place the bread slices on a baking sheet. Broil the bread so the top is 7 inches from the heat for 2 minutes or until lightly browned, turning over halfway through broiling.

Walk a Little Plainer Daddy

Walk a little plainer, Daddy,

Something I thought I never would eat

Broccoli.  Enough said, that would be enough to stop me.  But, Laura and I were looking for a new soup and my sermon for tomorrow is "Servant Leadership" so I chose something that Laura would like more than me.  Also, we both have been trying to eat better so we tried the following.  WOW!  This was good, it's in the recipe book.

ingredients
  • 6   cups 
    Swanson® Chicken Broth (Regular, Natural Goodness or Certified Organic)
  • 1/4  teaspoon 
    ground black pepper
  • 2   
    cloves garlic, minced
  • 2   
    bunches fresh broccoli, chopped (about 8 cups)
  • 3   
    large potatoes, sliced 1/4-inch thick (about 4 1/2 cups)
  • 1   
    large onion, sliced (about 1 cup)
  • 1 3/4  cups 
    milk
  • 1/4  cup 
    grated Parmesan cheese
directions
1.
Heat the broth, black pepper, garlic, broccoli, potatoes and onion in a 6-quart saucepot over high heat to a boil. Reduce the heat to low. Cover and cook for 15 minutes or until the vegetables are tender. Remove the saucepot from the heat.

Place 1/2 of the broth mixture into a blender or food processor. Cover and blend until smooth. Pour the mixture into a medium bowl. Repeat the blending process with the remaining broth mixture. Return all of the pureed mixture to the saucepot. Stir in the milk and cheese. Cook over medium heat until mixture is hot.

Krazy Karl's Homeade Chicken Noodle Soup


Ingredients
1 TB Butter
2 large wedges of garlic
1/2 C onions
3/4 C carrots
2 C cubed chicken
2 C egg noodles
1 TB parsley
black pepper
chicken seasoning
6 C chicken broth

Instructions
1.  Place chicken breasts in boiling water
2.  Dice Carrots, Onions and Garlic and simmer slowly in butter while preparing other ingredients
3.  After chicken is cooked through, remove from water
4.  Use broth from chicken and add bullion cubes or powder to make chicken broth - begin warming
5.  Dice chicken into very small cubes - sprinkle chicken with chicken seasoning and black pepper
6.  Combine simmering mixture, chicken, noodles and parsley into broth
7.  Bring to boil, reduce to medium and let cook for 10 minutes
8.  Let your spouse taste to make sure you got it right

The world says "white lies are okay"; God's Word says "Whatever is true...". The world allows for offensive language; God's Word says "Whatever is noble...". The world says cheating is part of life - just don't get caught; God's Word says "Whatever is right...". The world allows for unpure thoughts to fill your mind; God's Word says "Whatever is pure..." The world displays horrible ways of treating one another; God's Word says "Whatever is lovely..." The world endorses acting mean; God's Word says "Whatever is admirable..." The world says get by doing as little as possible; God's Word says "Whatever is excellent..." It is funny how I can immediately single out others who fall into the worldly category of each of the above. This morning, however, I am reflective more and more with how worldly I can be at times; how often I can justify a harsh word or impure thought. God never said "When in Rome..." Just because I am 'in' this world, I am not to be 'of' this world. Because Christ lives in me, I am to be set apart; I need to live my life differently. I am called to live Phillipians 4:8.
And nothing less.

A Strong Person

Today I enlisted opinions of what constitutes a STRONG person.  We throw that word around, but what does it really mean?  Fortunately, I have wise friends  that almost instantly can collectively flail their nuggets of wisdom.   One of them almost took my eye out!
Here is what they said:
  •  Faith n God
  •  Love is the core component of strength
  • Someone who can roll with the punches
  •  Understanding, committed, honest, being true to themselves and what they believe in, humble
  • A strong relationship with God, a strong and healthy relationship with family, values, morals
  • Strength is weakness, in that we are the strongest {or those are the strongest} when we are completely surrendered to the hope and power of Christ, not in it of ourselves.
  • Self-Control
  • Discernment
  •  Having the courage to love when you have every reason NOT to.
  • Submission to the will of God. When I am less, He is more. When I am weak, He is strong. When I get under the things that are over me...His authority in all forms...He puts me over the things that are under me
I might add.  A couple of things a strong person is not, even though it is sometimes what we mean when we say strong:
  • A Tendency to be Stubborn
  • A Need to Control
  • A Dominating mindset 
  • A Quick Temper
  • Could very easily "fly off the handle"
In some ways, I see all of these qualities in myself occasionally.  The verses that came to my mind immediately today concerning strength were these:

    And He has said to me, "My grace is sufficient for you, for power is perfected in      
    weakness." Most gladly,therefore, I will rather boast about my weaknesses, so that the 
    power of Christ may dwell in me. Therefore I am well content with weaknesses, with 
    insults, with distresses, with persecutions, with difficulties, for Christ's sake; for when I 
    am weak, then I am strong. (2 Corinthians 2:9-10)


    Even youths grow tired and weary, and young men stumble and fall; but those who 
    hope in the LORD will renew their strength. They will soar on wings like eagles; they will   
    run and not grow weary, they will walk and not be faint. (Isaiah 40:30-31)
